Crossplay
Yes: PC (Steam / Microsoft Store), PlayStation 5 and Xbox Series X|S can share one live multiplayer session. Crossplay is not cross-save — characters stay on their platform.
Required flags and gameplay ranges below are taken from the official Crossplay Server Requirements. Hosting notes are practical extras that commonly block console joins.

Current-gen platforms can play together. Legacy console builds and Switch are out.

There is no Switch version of 7 Days to Die.
What crossplay means
Everyone plays in the same world at the same time — dedicated server or player-hosted.
Progress and characters stay on their platform. Crossplay is multiplayer only.
Consoles need Easy Anti-Cheat and unmodded game files. One mod in the server Mods folder locks consoles out.
PC clients can join dedicated servers regardless of crossplay settings. Consoles cannot if the requirements fail.
All platforms must be on the same build. Console patches can lag behind PC briefly.

Hosting notes
Not listed on the official requirements page, but these commonly decide whether consoles can find or join you.
Any server-side mod or modlet breaks console joins. Keep Mods empty for crossplay.
Console browsers usually need ServerVisibility = 2 (Public). Friends-only or unlisted hides the server.
Many hosts require WorldGenSize 8192 or smaller for console-compatible RWG worlds.
